How To Make Mango Chia Pudding

Chia Seeds: when combined with liquid and let sit overnight, chia seeds develop a thick, gel-like consistency. This is how the name “chia pudding” was coined. With a wide variety of flavor combinations, you can make nearly any kind of chia pudding, from chocolate-y, to fruity, and even savory.

Mango Puree: for this recipe, use 2 fresh, medium-sized mangoes and blend in a high speed blender until smooth. Frozen mango can work as a substitute, but you may have to add a bit of water to prevent it from being too thick.

Almond Milk: we used sweetened almond milk, however you can use any kind of plant milk you want. If using unsweetened plant milk, try adding a bit more maple syrup for extra sweetness.

Maple Syrup: natural, unrefined sweetener that adds the perfect sweetness and depth to this chia pudding. Can be substituted with agave.

This minimal ingredient chia pudding is made with just 4 main ingredients: chia seeds, almond milk, mango, and maple syrup. Make this easy recipe for a nourishing breakfast or snack!

Serving Size: about 2 servings

Equipment:

high speed blender, measuring cups, measuring spoons

Ingredients:

1/4 cup chia seeds

1 cup vanilla almond milk (sub any plant milk)

2 mangoes, pureed

1 + 1/2 tbsp maple syrup

splash vanilla extract

Toppings: (optional)

coconut cream

hemp seeds

orange slices

additional mango chunks

Instructions:

  1. Cut and cube mangoes. Blend in a high speed blender until pureed.

  2. In a glass container or jar, combine all ingredients and mix thoroughly until well combined.

  3. Seal container with a lid and refrigerate overnight. Enjoy with coconut cream, hemp seeds, or additional mango!
